Under the direction of Chef Richard Prouteau, Le Castellane offers contemporary cuisine showcasing local produce and the rich culinary heritage of our region. Inspired by the seasons and local producers, the Chef creates elegant and generous dishes, with each ingredient carefully prepared while preserving its authentic flavours. Le Castellane has been awarded a Toque by Gault & Millau, recognising the work and dedication of our Chef and his team. The restaurant welcomes you for lunch and dinner from Wednesday to Sunday, for a truly gastronomic experience.

Meet the Chef
The Art of Gastronomy for your exceptional moments
Le Castellane's Chef Richard Prouteau has extensive culinary experience. He earned his CAP de Cuisine (Culinary Certificate) in 1990, his Brevet Professionnel (Professional Certificate) in 1992, and his BTS (Higher National Diploma) in Hotel & Restaurant Hospitality (Honours Diploma) in culinary arts and table service in 2014. He also served as a culinary mentor to ambassadors in 2012 and is recognized as a disciple of Auguste Escoffier. Chef Prouteau describes his cuisine as the perfect balance of modern and local ingredients, showcasing regionally farmed meats and French fish, transforming them into gourmet dishes of art.
