Meet the Chef

The Art of Gastronomy for your exceptional moments

Pedro Pancas, 35, was born and raised in the center of Coimbra. He was inspired by the gastronomy of Bas Mondego (Baixo Mondego in Portuguese) from the beginning of his career and has been perfecting it over the years. A graduate of the Coimbra School of Tourism and Hospitality, with a degree in Culinary Production Unit Management, Pedro completed his initial training with a degree in Communications and Marketing. He worked for numerous restaurants and hotels renowned for their gastronomy before joining our Mensa restaurant as Executive Chef, where he successfully established his signature style in Italian gastronomy. Pedro Pancas also manages all events at the Malibu Foz Hotel, including weddings and christenings, and is highly regarded for the quality and originality of his dishes. Winner of several awards, he recently received the Gold Diploma in the 'Tejo Gourmet' competition for the Mensa restaurant.
